Due to the synergy between fumaric and citric acid, these additives are used in combination in fruit juices to reduce the amounts of preservatives such as sorbates, propionate and benzoate.

Because of its acid strength fumaric acid is also used as a pH regulator. This enables the total reduction of acid content in the juice.

It is used in fruit concentrates to preserve them from bacteria and other microorganisms.
