
Fumaric Acid
Fumaric is one of the most powerful Acidulants. It increases the jellifying power and it can be mixed with other Acidulants. It does not have a hot or extreme flavor. It is used in Jell-o, Beverages, dough emulsifiers, jelly, preserves, hard candy coatings, etc.
It has excellent antioxidant properties this is why it has been used in butter, cheese and powdered milk. Its antimicrobial effect makes it useful as an additive to preserve fruits and vegetables.
This product has been successfully used pig feed to increase their weight. It improves their digestive activity and it reduces pathogenous bacteria from their digestive system.
It has antifungal properties to treat meat (better than acetic or lactic acid). It reduces the use of Citric acid in 40%, Tartaric acid in gelatins in 20% and the amount of gel in 2%. Combined with Benzoate and Boric Acid it is effective in the prevention of meat, fish and seafood degradation.
